When adding documents in Canvas and saving them as PDF, there is always the same layout, which is not very useful. The user should have the ability to pick and edit the order of the documents and pages to be printed. Additionally, when a.multiple page document is added, only the 1st page of that document is printed.

I think you can do this now! I can select/deselect what I want to print, and even move the pages by grabbing the 6 dots and moving it up or down.
