The CDF project you have linked to, belongs to the hands-on in Cognite Data Fusion Fundamentals
The project should only be used for the hands-on instructions given in the course linked above.
For Data Modeling specific, we have these learning paths
They do have hands-on instructions, but we don’t have any training environment for this. You would need write and read access to your own (your company’s) CDF project.

If you are particular looking for videos, I would take a look at the ones called “Microlearning” (a label on top of each “card”). They are “short” (3-10 minutes long) videos.
And we have 4 microlearnings that covers CDM.
