For our site, I know how to filter our site data sets to narrow selection of data. Instead of selecting multiple data sets to search only within our site, would it be possible to use wildcards or another filter to limit the search to our site?

Are you working in Data Explorer or in Search when you want to filter data this way?
For Search, we have the ability to create a predefined filter on data for your site/location, where you can include filters on data set (among other filter criteria). This way, you only select the main site/location filter, and you do not have to add additional specific filters on data set.
Can that be an option?
